Redox Peptides

In the oxidised state two molecules are linked through a disulfide bridge; in the reduced state the sulfhydryl group is free. The category name refers to this chemistry of the sulfur-containing side chain, and nothing else. The product in this category is Glutathione, the tripeptide gamma-L-glutamyl-L-cysteinyl-glycine. Its first peptide bond is formed by the side-chain carboxyl group of glutamate rather than the alpha-carboxyl group, which is why it is written as a gamma-glutamyl peptide. The reduced form is abbreviated GSH and the oxidised dimer GSSG; the material listed here is supplied in the reduced form as a lyophilised powder.
